My Sofrito Chicken – Flavor That Feels Like Home

There’s something sacred about the way our kitchens smell when we’re making food that carries our culture. This Sofrito Chicken is that dish for me—deep, rich, and layered in flavor. It’s the kind of recipe that brings people together, passed down in spirit and seasoned with intention.
What makes this recipe really special is how versatile my Sofrito Para Sofreír is. I love it because it’s not just a seasoning—it’s a foundation. For this recipe, I turned it into a paste by blending it with a bit of oil and water to marinate the chicken overnight.
It always fascinates me how easy it is to turn this into a sofrito paste! ½ cup of product, ¼ cup oil and ½ cup water. Toss in a blender and pulse for about 1 minute for the best consistency.
But my favorite trick? I make a quick infused oil using 2 tablespoons of Sofrito Para Sofreír and adding it to an oil dispenser with my go-to avocado oil. I use this to rub down the chicken before I season it and to drizzle on pretty much anything. Not only does it lock in moisture, but it infuses the meat with flavor in every single layer. It's a small step that makes a big difference.

Ingredients:
Whole chicken
3 tbsp Sofrito Para Sofreír paste
1 tbsp Sofrito Spice Rub
1 tbsp stick of butter
Instructions:
Infuse: Rub your chicken with the infused sofrito oil to lock in moisture and layer flavor.
Marinate: Coat the chicken with the sofrito paste and spice rub. Massage it in well. Cover and refrigerate overnight.
Prep: Place a tbsp of butter over the chicken before placing in the oven.
Bake: Preheat your oven to 375°F–400°F. Place the chicken in a buttered or greased baking dish.
Roast: Cook covered for 1 hour and then uncovered for an additional 30 minutes, depending on the cut. Baste with pan juices halfway through.
Serve: Let rest for 5–10 minutes. Baste with remaining pan juices and plate it up with rice, salad, or plátanos; enjoying every bite.
